All Alive pastries are 100% sourdough based, we cultivate our own starter that is free of chemicals and preservatives. It requires a longer fermentation time with extra craftsmanship, which gives our pastry a crispier layers and a more structured texture. We also developed a healthy recipe with less butter without compromising the flavor.
In Alive food, we cultivate our own wild yeast in house as dough starter with unbleached Wheat flour coming from a historical family owned mill in Barbara, Italy. Which is loved by a lot of Michelin starred restaurants such as 8 1/2 Otto E Mezzo Bombana. Our Sourdough is carefully hand folded by our artisan baker then followed by a long process of fermentation that takes up to 48 hours. Alive sourdough is packed with lactic acids that will bring you lots of health benefits and is always fresh!
Preheat the oven at 180°C the bake for 15 mins
Place in Toaster / Pan toast for 5 mins medium heat each side
Room temperature : 1 days
Refrigerator : 3 - 4 days
